paleo lunch ideas

This is one of those “throw a bunch of things together” salads that tastes fancier than it is! It is a really great paleo lunch idea, especially to take to work.  I like to keep my olive oil and vinegar, salt and pepper there and 6 pack of tuna and just bring the produce each day in a glass jar.  Toss together at lunchtime and you’re done!

What you will need (for 2 people):

  1. Wash and chop lettuce.
  2. Break up the tuna with a fork and add it to the lettuce.
  3. Chop and add tomatoes and avocados.
  4. Add olive oil and apple cider vinegar.
  5. Add salt and pepper.
  6. Mix and serve!
